Fish on Fridays

The Fish on Fridays series is a collaboration between Gloucester photographers Kathy Chapman and Marty Luster. Look for various aspects of Gloucester’s centuries-old fishing industry highlighted here on Fridays.

Today Kathy is sharing monkfish images. Romeo, the fish buyer for Connolly Seafoods,(www.steveconnollyseafood.com) is pictured at Cape Ann Seafood Exchange as he examines and comments on monkfish as the “poor man’s lobster”. Next image is a beauty shot of the wide smile. The second video is shot at Connolly, of the production line, showing the filleting and skinning of a monkfish tail.

  1. Always wanted to know how to skin a monkfish tail. The video makes it clear. I wonder what the white glove on the left hand means (if anything), as opposed the the blue one on the knife hand. What brand fillet knives do the pros use, and how often are they sharpened on the production line, and by what method? These guys are really good!

  2. These are really outstanding! I am addicted to Connolly’s and have purchased so much haddock there I may be responsible in part for the declining abundance of this species.

    Who remembers what the market price was for monk tails in the mid 60’s? I seem to recollect it was yet undiscovered and a mere pittance. Except where smart locals were concerned.
