Sista Felicia’s Famous Crab Cakes


1 small red onion

1 green pepper

1 red pepper

¾ cup parsley; stems removed

2 garlic scapes; or 2 large garlic cloves finely minced

1 envelope Good Seasons Italian Salad Dry Dressing Mix

¼ cup grated parmesan cheese

½ cups muddica (Sicilian Style Breadcrumbs; Recipe details below )

3 cups Plain style Panko

2 large egg

¼ cup Cains mayonnaise

3 1/2 cups fresh crab meat

½ teaspoon kosher salt

1 teaspoon freshly ground pepper

4 teaspoon Dijon mustard

1 teaspoon red cayenne pepper

Juice of 1/2 lemon

La Spagnola oil for frying

Dipping Sauce ingredients

1 cup Cains mayonnaise

1 teaspoon cayenne pepper

1 tablespoon lemon zest


1 whisk all Dipping Sauce ingredients together in small mixing bowl;  transfer to  serving bowl ; cover with plastic wrap until ready to serve

2  place onion, peppers, parsley, and garlic scapes in the bowl of a food processor fitted with metal blade, pulse 7-10 times

3  add Good Season Salad Dressing mix;  ½ cup muddica, parmesan cheese, eggs, mayonnaise, Dijon mustard, cayenne pepper, lemon juice, salt and pepper, mix well

4 add crab meat, mix well

*NOTE~  Mixture will keep refrigerated in airtight container 3 days

5  fix 3 cups Panko on clean work surface

6 using 1 inch cookie scoop, fix scant scoop of crab mixture in the palm of your hand; gently press and flatten

8 carefully place crab cake in Panko; coat all sides with Panko

9 repeat steps 14-16, fix all crab cakes before frying

*Note~ be sure to coat crab cakes with  Panko immediately before frying to insure crisp cakes

10  heat La Spagnola oil in large  fry pan over high heat ; (oil should fill pan ½ ways up the side of the pan) fry 2-3 minutes on each side flipping crab cake only once* Note~looking for a golden brown color

*Note~ before flipping cakes, carefully shimmy a small spatula under each cake lessening any stuck pieces, and always remember…. the less you handle the crab cake the better they will fry have patients!

11 remove golden crab cakes from hot oil; rest on cookie rack lined cookie sheet 5 minutes before serving; serve with chilled Dipping Sauce
