Grilled Lamb Chops with Creamy Dill Cucumber Dipping Sauce
This recipe was created several years ago, on a whim, using ingredients I had on hand in my pantry. The combination of flavors from the herbed marinated grilled chops are perfectly balanced with the Creamy Dill Cucumber Dipping Sauce. To say they are incredibly tasty is a huge understatement! These Grilled Lamb Chops have become the highlight of our Easter meal. I guarantee that they will disappear from the serving platter in minutes, and strongly recommend setting some aside for yourself if your the one cooking Easter Dinner!

Grilled Lamb Chops with Creamy Dill Cucumber Dipping Sauce
Ingredients
20 lamb chops hand cut for grilling by professional butcher
¼ cup fresh thyme leaves
¼ cup fresh oregano leaves
¼ cup fresh rosemary; stems removed
½ cup fresh dill; stems removed
½ cup fresh basil leaves
½ cup fresh parsley leaves
4 large cloves garlic; skins removed
3 table spoons Dijon Mustard
¼ cup dark brown sugar
¼ cup white wine
Juice of 1 lemon
Rind of 1 lemon
¼ cup soy sauce
1/2 cup olive oil
3 tablespoon raspberry vinegar
1 teaspoon kosher salt
2 teaspoons freshly ground pepper
*Note: DO NOT use pre chopped jarred garlic or dried herbs in this recipe
Step-by-Step
1 place all ingredients except lamb chops in the bowl of Cuisinart food processer fitted with metal blade and pulse on and off for 30 seconds or until well blended; DO NOT puree (looking for a consistence that the herbs are still recognizable)
2 place chops into extra large mixing bowl or plastic container; pour prepared marinade over chops and toss carefully using your hands to insure all chops are coated with marinade; cover chops and marinate in refrigerator for 24 hours; toss often
3 remove chops from refrigerator and allow chops to return to room temperature by resting covered on counter for 1 ½ hours prior to grilling
4 pre heat grill on high setting; carefully coat surface of grill racks with “Grilling Nonstick Spray”
5 using long grilling tongs arrange cops on hot prepared grill; grill roughly 3-4 minutes per side (only turning chops one time during grilling process)
6 arrange chops on large serving platter accompanied with creamy cumber dill dipping sauce; serve immediately while warm
Creamy Cucumber Dill Dipping Sauce
Ingredients
Juice and rind of 1 lemon
¾ cup sour cream
1 cup cream fresh
1 teaspoon freshly ground pepper
¼ teaspoon kosher salt
½ cup finely diced red onion
½ cup fresh chopped dill
1 cup English Cucumber; chopped into petite bite sizes pieces
Step-by-Step
1 place all ingredients except cucumber into mixing bowl; whisk together well; fold in cucumber pieces
2 transfer to airtight container; refrigerate until ready to serve; will keep 3 days refrigerated
