Romeo Solviletti, General Manager for the Gloucester Plant of Connolly Seafoods (http://www.steveconnollyseafood.com) talks about Silver Hake and the return of Cod off the shores of Canada.

Marco Goulart cuts hake fillets fresh from the FV Marue (New Bedford). Hake is a large marine fish usually considered part of the Cod family.

  1. That’s good the hear ~ as Fred would say “in cod we trust”. Your Friday posts ~ always interesting. Our vacation chef, nephew Charlie, makes the trip the Connolly’s every morning ~ the best Gloucester dinners every night!

      1. Oh no ~ he is not a professional chef ~ sorry I left that impression. When we all go on the Gloucester vacation Charlie is at the helm of the kitchen ~ hence “our vacation chef”. We all fall into tasks ~ everyone seems to have a speciality ~ it’s like clockwork ~ dinner is a Gloucester feast every night ~ and it starts at Connolly’s.

  2. Excellent Fish on Fridays (FOF) Very fine art filleting these out and I remember them being used for fish cakes. Had a guy who drove an Cushman bread truck around with fish in 1960’s we called him Sam the fisherman. Fillet in the truck wrap it up right in front of your house played some music so you knew he was coming like the ice cream trucks…Thanks Dave:-)
