    He is making meringue glace’s. You fill them with fruit or some other delicious filling

      Actually, he is making a component of a Pavlova, an Austrailian dessert created to honor the great Russian dancer Anna Pavlova when she visited Austrailia years ago. Tonight’s wine dinner theme is Austrailian wines, complimenting food dishes that are regularly served there.

          Google Pavlova dessert and the answer will reveal itself…CAUTION…if you make it yourself, make sure not to add sugar or vanilla to the whipped cream, as the sweetness of the primary components will be lost…

It is a meringue based dessert similar to a glace ‘ yet glace’s add sugar and vanilla vs. whipped. I love to bake so now I have a new recipte to try! Thanks, again! Jeannette
