    • Actually, he is making a component of a Pavlova, an Austrailian dessert created to honor the great Russian dancer Anna Pavlova when she visited Austrailia years ago. Tonight’s wine dinner theme is Austrailian wines, complimenting food dishes that are regularly served there.
