Now that St. Peter has been placed back in the window of the St. Peter’s Club, and all the festivities and tradition’s surrounding “The 2014 Fiesta of St. Peter” are officially in the history books forever, it’s time to switch gears and prepare for Fourth of July barbeques, and Gloucester’s Fishtown Horribles Parade held July 3rd! Over the next few days I will be posting several recipes perfect for this upcoming week of summertime fun! Last night family and friends enjoyed today’s recipe “Grilled Surf & Turf Tequila Chipotle Flank Steak & Shrimp”Fajitas”  at Niles Beach for dinner as the sun began to set.

Grilled Surf & Turf Tequila Chipotle Flank Steak & Shrimp Fajitas

Grilled Surf & Turf Tequila Chipotle Flank Steak & Shrimp Fajitas

Flank Steak Ingredients

1/2 cup Olive Oil

2 large Limes, Juiced

¼ cup Jose Cuervo Tequila

4 large canned Chipotle Peppers in Adobo Sauce

3 tablespoon  Adobo Sauce

5 large cloves garlic

1 cup Cilantro

½ teaspoon kosher salt

1 teaspoon freshly ground pepper

1 whole Flank Steak

1 large sweet onion; sliced thin

1 red pepper; sliced

1 yellow pepper; sliced

1 orange pepper; sliced

Shrimp Ingredients

¼ cup Jose Cuervo Tequila

½ cup cilantro

4 large garlic cloves

1 large lime; juiced

1/2 teaspoon kosher salt

1 teaspoon freshly ground pepper

1 large canned Chipotle pepper and 1 tablespoon adobo sauce

20-25 medium size shrimp; peeled and deveined

Serve with

1 package Soft Flour Tortillas; wrap size

Guacamole

Salsa

Sour Cream

1 package shredded cheese; Mexican blend

Step-by-Step

1 combine first 7 ingredients in bowl of food processor fitted with metal blade attachment; process 1 minute or until peppers garlic and cilantro are evenly blended

2 place flank steak, sliced peppers and onion in large Ziploc bag or mixing bowl; add marinade; mix well; marinate in refrigerator minimum 2 hours and up to 24 hours before grilling

*Note~ remove from refrigerator 1 hour before grilling

3 place first 7 ingredients in bowl of food processor fitted with metal blade; process 1 minute

4 place shrimp in Ziploc bag or mixing bowl; add marinade; mix well ; refrigerate until ready  to grill

5 grill flank steak to your desired likeness 7-10 minutes per side; rest 5 minutes before slicing

6  heat grill; prepare grilling surface carefully with Pam Grilling spray;  place pepper onion mixture on aluminum foil; grill 7 minutes; remove foil and grill directly on greased grill surface 5-7 minutes; remove from grill

7 grill shrimp 2 minutes; turn shrimp; grill 2-3 additional minutes; remove from grill

8 serve immediately buffet style with Soft Flour Tortillas, guacamole, salsa, sour cream and shredded cheese
