Valentine Cherry Meringue Lollipops

Valentine Cherry Meringue Lollipops

Ingredients

5 large egg whites

1 teaspoon cherry candy flavoring (sold at major baking and craft stores)

2 3/4 cup confectioners sugar

24 Cherry flavored Lifesavers

12 lollipop sticks

Step-by-Step

1 combine egg whites confectioners’ sugar in bowl of stand mixer fitted with paddle attachment; begin mixing on very low speed 40 seconds until confectioners’ sugar is well incorporated

2 switch paddle attachment to whisk attachment; whisk 10 minutes on high speed; add cherry flavoring; continue whisking 10 additional minutes until thick and shiny

3 transfer meringue to pastry bag fitted with large star tip

4 using food color marker trace twelve 4 inch heart shapes using cookie cutter as guide

5  pip meringue along inside edge of traced line; place three lifesaver candies in center;(also can be made with candy centers, by omitting lifesavers);  slide lollipop sticks into bottom of each heart

6 bake 2 1/2 hours in preheated 200° (do not open oven door while baking); turn oven off; crack open oven door; allow to cool with oven door open five minutes before removing from oven; cool completely on counter before packaging

    • Your most welcome. Enjoy the recipe…I made another batch today without Cherry Flavoring, for my valenties who many not like cherry Flavor…they are yummy either way! Happy Valenties Day!
