Mini Almond Thin Dessert Sandwiches with Chocolate Chevre Cheese and Balsamic Strawberries
Ingredients
1 5 oz. SouthCoast Farms Chocolate Chevre Cheese; cut into 3/4 inch thick rounds (Chocolate Chevre Cheese is sold at The Cave on Main Street, Gloucester)
1 cup fresh diced strawberries
1/4 cup vanilla infused granulated sugar ( regular granulated sugar can’t be substituted)
3 tablespoons white balsamic vinegar
1 cup fudge sauce; warmed (I used Fudge Everything, fudge sauce, also sold at The Cave on Main Street)
1 box Anna’s Almond Thins by Biscoff (cookies are sold at Stop & Shop)
1 bottle sweetened whipped cream
Confectioners sugar for garnish
Step-by-Step
1 warm vinegar in microwave 30 seconds at full power; add sugar; stir to dissolve; and diced strawberries; mix well; marinate 15 minutes at room temperature; strain liquid from strawberries in colander
2 drizzle a decorative pattern onto each serving plate using warmed fudge sauce; arrange one almond thin on top of fudge sauce
3 arrange one cheese round on Almond Thin Cookie; spoon 1/4 cup strawberries over cheese; drizzled with fudge sauce, and a dollop of whipped cream
4 arrange Almond Thin Cookie on top and sprinkle light dusting of confectioners sugar; serve immediately

That is a beautiful Valentine dessert ~ yes ~ dare I say ~ sensual adult dessert. My mind is twirling ~ if I can find that cheese in Annapolis ~ Valentine plans are done ❤

Shopped today ~ Fresh Fields did not have Annie’s almond cookies but in their bakery had thin almond crispie cookies. Could not find vanilla infused sugar but did find vanilla sugar turbinado style, could not find the chocolate chèvre cheese but found a lady in the store who told me how to turn it into chocolate ~ and I found a recipe ~ everything else was easy ~ and all the ladies I talk to thought it sounded great!
